The word huhu can be found from Webster's Third New International as follows:

huhu: a large creamy white roundheaded grub that is the larva of a yellowish brown New Zealand beetle (Prionoplus reticularis), bores in dead trees and timber, and was formerly much used as food by the Maori

It's not necessary to use huhu grub or beetle to say it. The reason that huhu grub is so predominant is that if you don't say so, people (outside NZ) might not have any idea of what you are talking about.

Wiktionary, like Urban Dictionary, is basically a user contributed dictionary, and the definition there is not about English for this specific term.
