Holy cow is not talking about the holy animal in Hinduism. It is an exclamation used to express surprise, wonder, dismay, admiration and so on. Holy cow is used very often by Americans.
Instead of saying holy cow, there are other variations like holy cats, holy Christ, holy f***, holy gee, holy mackerel, holy Moses, holy schmutz, holy shit, holy smoke, holy sox, holy Toledo and many many others. Besides this "holy" thing, there's another series of similar expressions in the form of "I'll be..." The following is a list of the common ones. I'll be surprised! I'll be damned! I'll be darned!
